‘Loving Legumes’ Cooking Class

The College of Applied Human Sciences is sponsoring a class today from noon to 1 p.m. in the Kendall Anderson Nutrition Center titled “Loving Legumes” as part of the “Secret Ingredient Dining Series.”

The class, held in Room 114 of the Gifford Building, will focus on a member of the legume family, which is known for its high protein and fiber content.

Culinary director and registered dietitian Michelle Manson will share tips on how to incorporate this legume into meals participants can make at home.

Participants will sample several dishes and learn how to save preparation time and improve digestion. They will also receive recipes and nutrition handouts.

The class costs $20 ($10 for CSU employees), which includes recipes and education materials. Lunch is provided as well. Participants can register online at or call 970-491-8615.

The final class of the “Secret Ingredient Dining Series” will be Dec. 9 and will focus on nutritious sweets.
